Wine Profile: 2012 Orin Swift Papillon
May 1, 2015
Since Orin Swift Cellars opened in 1998, owner Dave Phinney has developed a cult following with his exceptional skill at crafting bold, adventurous and innovative wines. Papillon (French for “Butterfly”) is Phinney’s take on a traditional Bordeaux blend of Cabernet Sauvignon, Merlot, Petit Verdot, Malbec and Cabernet Franc. Grapes were sourced from a variety of vineyards throughout Napa Valley to ensure the quality and balance of character.
The pleasurable sensory experience begins as soon as you pour a glass. Vibrant garnet in color, this wine has a clarity and intensity of color that catches light like a flawless gemstone. The nose is equally vibrant, leaping out of the glass to bring you aromas of blackberry jam, warm vanilla and baking spice. The palate is full and soft with juicy fresh fruit flavors that deepen to plum, cassis and dark chocolate. Despite the fullness and ripeness of the fruit, the wine retains a lively acidity that keeps it from feeling heavy. The tannins are elegant and soft, but linger into the finish, showing this to be a wine easily enjoyed now, but with the structure to see several years of cellaring.
